Still clinging onto the last days of summer? Potato salad is a summery dish to me, served cool and on the side of a bit quiche or something similar. The below makes a decent bowl that should serve around four people
Ingredients
- 500g baby potatoes, cut into half
- A handful of chives, chopped finely
- 3 tbsp mayo
- 1 tbsp butter
- Salt and pepper
Method
- Boil the potatoes for around 10 to 15 minutes until they are soft but not calling apart
- Drain into a bowl and add the butter so it melts over them. Stir well to coat
- Leave to cool for about 5 minutes
- Then mix in the chives and mayo and season with salt and pepper to taste
