Potato Salad

Still clinging onto the last days of summer? Potato salad is a summery dish to me, served cool and on the side of a bit quiche or something similar. The below makes a decent bowl that should serve around four people

Ingredients

  • 500g baby potatoes, cut into half
  • A handful of chives, chopped finely
  • 3 tbsp mayo
  • 1 tbsp butter
  • Salt and pepper

Method

  • Boil the potatoes for around 10 to 15 minutes until they are soft but not calling apart
  • Drain into a bowl and add the butter so it melts over them. Stir well to coat
  • Leave to cool for about 5 minutes
  • Then mix in the chives and mayo and season with salt and pepper to taste
