Stuffed Peppers

This doesn’t require a lot of effort as it used the Merchant Gourmet pouches of grains which are just delicious

Ingredients

  • Peppers, tops cut off and hollowed out
  • 2 packs of merchant gourmet Spanish style grains
  • 1 onion, chopped
  • 2 tbsp tomato puree
  • Olive oil
  • Parsley to serve

Method

  • Add a little oil to a pan and then gently fry the onion until slightly soft
  • Then add in the tomato puree and fry for a further 2 minutes
  • Add in the pouches of grains and heat gently for a further two minutes.
  • Arrange the peppers in a deep oven proof dish
  • Then tip the grains mixture into each pepper, drizzle with olive oil and bake in the oven for about 25 minutes at 180 degrees until the peppers are soft. You may want to pop a piece of foil over the top to stop the grains burning
