Marble Malt and Chocolate Cake

A fudgy textured cake and so satisfying to make

Ingredients (Malt Section)

  • 225g plain flour
  • 40g malt powder (I used vegan Horlicks)
  • 1tsp bicarb
  • 120g caster sugar
  • 120g dark brown sugar
  • 300ml hot water
  • 60g veg oil
  • 1 tsp vinegar
  • 1tsp baking powder

Ingredients (Chocolate Section)

  • 50g plain flour
  • 10g cocoa powder
  • 1/4 tsp bicarb
  • 30g caster sugar
  • 30g dark brown sugar
  • 75ml hot water
  • 15g veg oil
  • 1/4 tsp vinegar

Method

  • Preheat oven to 180 degrees/160 degrees fan
  • Using separate mixing bowls, combine the ingredients for the malt cake and the chocolate cake by mixing the dry ingredients for each cake separately
  • For the malt cake, mix the malt powder with the hot water and add to the malt cake bowl. Then add the rest of the wet ingredients and mix well to combine
  • Add the wet ingredients to the dry ingredients for the chocolate cake and then mix well to combine
  • Pour the malt cake mixture into a lined 10 inch cake tin
  • Then put spoonfuls of the chocolate cake mix on top of the malt cake mixture and allow to sink in slightly
  • Using a knife, swirl the chocolate cake mixture through the malt cake mixture, taking care not to overmix
  • Put in the oven and bake for 30 to 35 minutes until a skewer comes out clean
