This is super easy to make and the most amazing when served with fresh bread
Ingredients
- 1 tin/400g butter beans
- 1 tin/400g tomatoes
- 1 onion, diced
- 2 tbsp green pesto (I use wild garlic pesto)
- 100g vegan chorizo, chopped roughly
- 1 tbsp veg oil
- Salt and pepper to taste
Method
- Fry the onion gently in the oil. Once it softens, add the chorizo and fry until it colours slightly
- Then add the butter beans and tinned tomatoes and stir well. Simmer for 5 to 10 minutes until it thickens slightly
- Stir through the pesto and season to taste
- Serve with fresh bread on the side
