Tomatoey butter beans with chorzio

This is super easy to make and the most amazing when served with fresh bread

Ingredients

  • 1 tin/400g butter beans
  • 1 tin/400g tomatoes
  • 1 onion, diced
  • 2 tbsp green pesto (I use wild garlic pesto)
  • 100g vegan chorizo, chopped roughly
  • 1 tbsp veg oil
  • Salt and pepper to taste

Method

  • Fry the onion gently in the oil. Once it softens, add the chorizo and fry until it colours slightly
  • Then add the butter beans and tinned tomatoes and stir well. Simmer for 5 to 10 minutes until it thickens slightly
  • Stir through the pesto and season to taste
  • Serve with fresh bread on the side
